Oil pressure is purely a measure of restriction anyway, if the oil is like tar, it doesn't mean it's lubricating the bearings...
You could have the pressure up against the regulator at 6bar with porridge in the sump... It wouldn't be doing anything as it'd barely be able to get into the bearings!
Unless you're having serious oil pressure drops at high temperature, I'd use the closest to the standard viscosity as possible.
