Yeah I've got too sump holes would this adaptor work with a 1/8 npt temp sensor screwed into it?

In theory yes as the outer thread will be the sump size and the inner the sensor size, but in my opinion a m14 sensor would be better but thats just me

Getting hold of a M14 sensor it's a bit hard and a gti 6 one is 55 quid just for the sensor think il go with a couple of adapters
