Does make a good difference, especially on a standard intercooler...
Just water does make a good difference, but you'll really notice it with methanol in the tank... However it does become expensive, it's essentially like adding another fuel to your car!!!

Drops the intake temperatures MASSIVELY in fairness...

Im want to get a kit with a 10.5 litre tank after the 2nd of feb, how does it work? Can you notice it under hard acceleration temp wise?

Basically it sprays a fine mist of water and methanol into the intake air, since water has such a high specific heat, it absorbs a massive amount of heat from the air, the methanol goes through phase change to a gas, which also absorbs a massive quantity of heat... Also the methanol is a fuel, so helps with combustion... Even without long pulls, you can feel the difference when it comes on...

I'm not sure entirely on how it works and just wondering if you have it on all the time or just when you put your foot down?

I'd have it on a switchable system with some sort of controller so it kicks in when you come on boost, that's my thoughts anyway..

I think you can have something buy your accelerater pedal so you can have it only on full throttle according to bruse

Yeah, comes on at a preset boost pressure, don't have it on all the time, causes proper shit running as it cools the combustion too much...
Some have a controller you buy that increases pump duty cycle as the boost increases... If you have a good intercooling system, its not as effective, but for long hard pulls, it keeps inlet and exhaust temps in check.
