When you put your key in the ignition the immobiliser checks that the correct transponder is present in the key.  If it sees the transponder it sends a message to the ECU telling it that it's OK to start the car.

Soft unlocking occurs (as Cully said) when you unplug the ECU while the car is running. The ECU will then remain in an 'it's OK to start the car' condition until it is once again able to communicate with the immobiliser.  So to maintain the unlocked state you need to unplug the immobiliser/security unit before you try to start the car again and leave it unplugged.  i.e. your car is now without an immobiliser but if that's the cause of your no start issues you may be happy to live with it that way.

I've heard of people soft unlocking petrol models but not sure about the HDi's.  Am sure someone can confirm.

A hard unlock stops the ECU from trying to communicate with the immobiliser even when one is present/plugged in.  A hard unlock is usually done by specialist ECU diagnosis/repair companies.  The advantage is that the ECU can be used in any vehicle of the same model, even one with it's immobiliser unit still in place.  (The hard unlocked ECU doesn't seek a security code from the immobiliser, let alone the one it was originally paired with).  Take a soft unlocked ECU and plug it in to a different vehicle with its immobiliser unit in place and you're in trouble!
