Temperature Sensor

Information 
After sitting in Hovis' rallye at Pugfest waiting for a passenger run on the hillclimb, I noticed his water temperature wasn't increasing while it was idling in traffic...he said he's fitted the temperature sensor (I believe that was the one - It's purple, if that helps at all) from a 205, which kicks in the fans at a much lower temperature.

Does anyone have any more info about this? I'd be interested in doing this with the 6 as there are some days I'm sat in a lot of traffic but it's not always possible to get out and unplug the sensor for the fans. I know it'd be helpful for a number of other people too!
