Exhausts are tricky, there's more to it than just pressure and restriction. Loosing the cat will no doubt drop the lower end torque making drive-ability a little worse but loosing the cat is different to having a blowing exhaust. If the exhaust is blowing around the cat area it could mess up the lambda sensor readings and cause you too over/under fuel which isn't ideal.
If it's blowing in the wrong places it could also mess with the scavenging resonance which once more will loose you power
The sports cats seem to be a bit harder to get through an MOT but if you mention it to the tester and they get it nice and hot before testing you should be fine. Plenty of people out there with them and passing
