After owning all three, my piece.
GTI6 - Is super fun to drive, amazing as a base for handling modifications and personally, is something i'd take pride in detailing as opposed to spending money on engine/power mods as it can get pricy and quite technical and time consuming
XUD - Is relatively cheap and easy to modify and again is amazing to drive with a decent turbo. Down side is that most DT's don't tend to be that visually appealing and is a diesel which can be an off putter to some
Hdi - Never modified but a decent compromise between a GTi and DT. Dturbo specs have GTi suspension setups and modification to stage 1 can be relatively simple.
