Sean if you struggle to put weight on dont worry about what you eat and at what time.
Id suggest upping carbs plenty of potatoes, bread & pasta etc you have a fast metabolism by the sounds of it.
I carb up immediately after the gym and then have a lean meal. When I get changed when finished in the gym il have 5 caramel snackerjacks for my instant carbs or pop tarts. Id suggest a carb drink for training carb up immediately after gym and just load up on your carbs and see how u go
I used to have egg cheese n bean toasties a while back good source of healthy fats (cheese and egg), protein (egg n beans) and carbs (cheese, beans, bread) was one of my favs lol
