Defs worth vee-power or similar, it makes a big difference.
Where was peak torque btw?
Deffos worth a look at the air filter; that could be restricting it some...

Peak torque for the '6 is only 145-odd lbs-ft at 5500rpm, and it makes peak power at 6600 IIRC, so its not down on down on torque, it'll just be down to where it's making it I reckonz
Decent plugs will deffos make a difference.
Only worth looking at camtiming last of all imo.
I did think it looked a bit sluggish on your video the other day...
EDIT: Looking at the AFR graph, it seems to be leaning out a bit at higher rpms (the drop on torque & power just past 6000 as Dum mentioned).
