Well after another evening at the Danny and Emma household we decided to change the ROM on my One X again to a JB REMIX 3.0 and I have to say this is by far the most epic ROM I've had.
My last ROM an Endeavoru was as buggy as f*ck...
No Bluetooth.
No video recording.
No voice or sound input I.E no soundhound.
Not able to connect up to PC as mass storage
I've tested all the above on this ROM and they work flawlessly.
So for the likes of Scott, Ed and Phil who have all been toying with the idea of rooting... The battery life is awesome, ran for 35 minutes constant use with ATorrent App running and using facebook etc with only 1% drop in battery level. This has all the features still supported and enabled.
So DO IT! So worth it. I ran another benchmark and this scored over 2000 points higher than my previous Endeavoru ROM.
I'm also only running Android 4.1.1 AFAIK but has the features of 4.2.1 and up. It's also got a slight custom look to it which is awesome.
Just thought I'd write this up for people who are interested.

Edit: Also obviously we've had a lot of newbies since this thread has been alive so if you're new to Rooting your phones (Same as jailbreaking on an IPhail) and are interested in doing this then a website called XDA Developers has all the ROMs there to download and most come with step by step walk throughs.
