Carpets stay wet for ages though, even if you have dehumidified it.
Alternatively, get someone to water the car with a hose (or wait for decent rain) and watch where any leaks come in. Also, don't forget if you're wet (damp coat for example) thats putting moisture into the car which will cling to the cold windows.
